St. Andrews Shiraz
Wine
Taylors St. Andrews Shiraz draws from the St. Andrews Vineyard, a historic Clare Valley site. In the finest vintages, premium parcels of fruit are selected from blocks containing some of Taylors oldest vines.
These grapes are gently destemmed and transferred to headless barrels where they are inoculated with a specialist Shiraz yeast strain. During fermentation the juice is hand plunged twice daily.
After two weeks on skins the wine is pressed and returned to the same barrels for malolactic fermentation. It is then racked off lees, blended and transferred to American oak barrels to age for 20 months.
Mahogany red, Taylors St. Andrews Shiraz is a voluptuous wine with rich dark berry flavours, lashings of high quality oak, balanced tannins and persistent length. Cellaring potential is 10 years.
